Slow toasted pork tenderloin, instant potatoes, corn and pepper sauce. All store bought, cook and serve.
The pork was roasted in foil for 90 minutes at 275f and then opened up and broiled until crispy.
It feels similar in vibe to dutch baby pancake. Both use a preheated pan or dish, some fat, and a dough that is quickly poured in and baked in the oven. It tastes better this time than last I made it, but the consistency is the true star of this dish. It’s both crunchy and chewy, and the bits of meat add some variation. Though I would love to add some spices or sauce, or vegetables on the side or something

I’ve been working on a variation of a simple Chinese dish (Tomato Egg stir fry) to make in the morning for a single person and I think I have something usable and repeatable by others at this point.
It has a very safe taste. Feels like it’s connected to mac n cheese (but it has potatoes). Apparently they often serve it with apple compote, which works ok, but I like it better without

The apple is the first one I’ve ever eaten from my own tree that I planted years ago. Normally they went bad before ripe and I’d give them to the chickens.
I’m not sure I’m so much a fan of this. Maybe the recipe isn’t the best there is but it felt not that creamy and lacked acidity despite my attempts to adapt with some more apple cider vinegar.
I always liked coffee based desserts so I decided to try my hand at tiramisu. It was much easier than I expected and the results are pretty good. I will be making this more I think.
The rice: lightly fry some cinnamon stick, green cardamom pods, cumin seeds, and cloves in olive oil. Add rinsed rice and stir it fast so it doesn’t stick. Add the water, some tumeric and salt. Mix it all up and put the lid on. Turn to high or medium high, bring to a boil, reduce to low, check it in 10 minutes to see if it’s done.
Take a baking sheet and flip it over. That’s your pizza steel for this thin crust pizza. 425 for 8-12 minutes. And I definitely recommend a sprinkle of corn meal or semolina between the baking sheet and the pizza.
My wife fell in love with the Tropical Heat smash burger at Sonic. This was my attempt to do it at home. It is, surprisingly, cheaper to make at home. I need to work on the pineapple jalapeno glaze a bit but it’s a very solid burger.
i got some duck eggs at the farmer’s market with no plan on what to do with them. i thought i’d try them in the purest form to get a sense of the difference from chicken eggs.
Do you have a a lid to your blender that is a pain in the butt to clean because it’s filled with nooks and crannies instead being a sealed flat surface?
Extra chunky. I typically start with a 28oz can of crushed tomatoes and start the sauce at least 30 minutes before I start the pasta. Garlic, home grown dried basil, orega, star anise, red pepper flakes, a pinch of cayenne power, salt.
Leftover bits from the sandwiches the other day plus some other things. Most notably some smoked sharp cheddar and smoked mozzarella. I smoked the moz in 2024 and the sharp cheddar in December.
It’s like a simplified bolognese, but it takes less time and uses cheaper ingredients. Works well for weekdays. It was very hard to resist having a second serving

The original variant is, according to Wikipedia, supposed to be similar to ice cream. But this one uses a cream made of mascarpone, yoghurt, sugar, heavy cream and vanilla. It makes it easier, but I still want to try making the original which is “made by boiling cream, egg, sugar and syrup to create a custard-like or meringue-like puree which is then frozen”. Sounds harder, but maybe better
Refried beans started from dry beans. Chicken is leftover rotisserie chicken. Headed to the tienda for a ripe avocado without waiting for days.
Cost per person $4.40 without the chicken it would have been $3 and vegetarian.
Margarita not included. That’s $1.80.
So I’ve managed to end up with two Costco-sized containers of Kraft grated parmesan. I’ll reach for real parmesan 95% of the time, with Kraft being an occasional nostalgia pick, but these will go bad long before I can get through them at my normal consumption. The containers are both opened, so can’t donate and I’m loathe to waste food, so been trying to think of ways to use it all up.
This easy recipe to do, comes from the Food Network Italia. A very beautiful channel, way, way different and better from the USA, with tons of recipes and cooking shows to watch. I do love it and watch it 2–3 times per week when possible.
Okras are like green been, they to be cleaned with water and chop off their head, let it a bit in water with vinegar and cook them in the pot with all the ingredients mentioned above + olive oil, pepper and salt.
Okras can be cooked with meat as well, starting always with the meat, and then adding the okras.
Lovely food that makes me escape out of the ordinary every day food.
It’s a crisp 83°f (28.3c) in the house. I decided I was definitely not turning on any heat source for dinner. Which isn’t cheap.

The recipe is easy to do:
Put overnight the chickpeas in water, give the a wash next day and boil them for 15-20 minutes, put in the oven for 30 minutes or so with the rest ingredients.
Baked the bread before the kitchen got too hot. Kinda tossed the rest together. Chickpeas, black beans, corn, cucumber, onion, herbed garlic goat cheese, geek seasoning, cumin, lemon juice olive oil, red pepper flakes, black pepper.
No knead dough, extra cheese, I sliced and popped the polish sausage and corporate frozen meatballs in the air fryer before adding them to the pizzas and cooking the pizzas.
A friend had a kidney transplant and bought a lot of frozen fruit after that. As happens a lot in cases like that they can’t eat the frozen fruit anymore because of medication interactions. So they gave it to us.
Making hot pot later and I don’t want to waste any of my veggies. Thin cut broccoli, I’m guessing 3 mins? Thick crowns, I’m guessing 5-6 mins? Does that sound right or will they be mush?

Aldi has bronze extruded pasta like spaghetti, linguine and fettuccine for $2 a pound. That is a fraction of the normal price. They are in thicker plastic packaging. I know you hate that but it’s less likely to let pantry months in. So you don’t need to put it in another container like you do when it comes in cardboard packaging.
